Chocolate Orange Cookies (GF)
Chocolate Orange Cookies
Ingredients
2/3 cups sugar
1/3 cups brown sugar
1/2 cup softened, unsalted butter
1 egg
1 tsp vanilla extract
1 cup + 1 tsp Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1/4 cup cocoa powder
1/2 tsp baking soda
1 tsp salt
zest of 1 orange
sparkling sugar
Preheat oven to 350˚F and prep a cookie sheet with parchment paper.
Cream together sugar, brown sugar, and softened butter in your stand mixer with the paddle attachment. Add egg and vanilla and mix until combined.
In a separate bowl, sift together flour, cocoa, baking powder, and salt. Mix to evenly distribute and add to stand mixer bowl. Mix until combined, scraping edges as needed.
Add the zest of one fresh orange and fold into the batter.
Cookie batter will be soft, but will hold it's shape. Scoop out even amounts of batter (I use this #40 scoop) and gently shape into balls. Very lightly press balls onto cookie sheet (press just enough to make stick and not roll around) and top with sparkling sugar.
Bake in over at 350˚ for 10-12 minutes. Allow to cool for 2-3 minutes before moving to a cooling rack.
How are you holding up? I think you could use something comforting. Chocolate is a good idea. Orange is even better. I whipped these up last month but, you know, things got weird, so they didn't make it out there right away. I'm just going to leave you with this for now.
