I hope you all have a nice Valentine’s Day today. I’m wearing lots of purple and pink today because those colors make me happy.
Valentine’s Day can get drowned in expectations sometimes, so I just want to send out a little reminder to you today that expectations are often what disappoint us throughout our lives. We put a lot of pressure on things and people and events when we silently assume they are on the same page as us. Marriage has taught me this. And it’s silly.
No, I don’t have any magic words that will keep you from ever being disappointed, or a way to meditate until you never have any expectations again. But I think if we consider what our expectations of others does to our relationships, we’ll gradually learn that we are all different. We all have different ways of showing and responding to loving and being loved. I think we can get hung up on things we think we deserve, but maybe today we instead focus on others and the kindness and love we have in our hearts that we can share with them.
I hope today can be a reminder that love is a real thing.

These sugar cookies are so simple and delicious. It’s the perfect little treat to share.
I especially like the marbled version, so instead of doing a double batch, one chocolate and one vanilla, I cut the dough in half once it’s all mixed and I add the cocoa powder to one. I cut out as many vanilla and chocolate cookies that I want, and then I mix the two doughs together a little bit with just my hands. It rolls out into such a pretty marbled pattern!
2 cups gluten free flour
3/4 tsp baking powder
1/4 tsp kosher salt
1/2 cup granulated sugar
3 tbsp powdered sugar
8tbsp softened butter
1 tsp vanilla
2 tbsp cocoa powder (optional)
Preheat oven to 350˚F and prep a cookie sheet with parchment paper.
In the bowl of your stand mixer, cream together butter and granulated sugar until smooth. Add egg and vanilla and mix until combined.
In a separate bowl, mix flour, baking powder, salt, powdered sugar, and optional cocoa powder . Add flour mixture to your stand mixer bowl and mix until everything comes together and forms a thick dough.
Roll out dough onto a sheet of parchment paper. If needed, sprinkle a little cornstarch on the paper and rolling pin if the dough starts to stick (it shouldn’t though). Cut out shapes and transfer to your cookie sheet.
Bake for 8 minutes! Cool on a cooling rack for a few minutes before eating!
If you’d like to add a little drizzle, just mix together 1 cup of powdered sugar and 1 1/2 tbsps of milk and drizzle over top once they’re completely cooled.
Remember, love without expectation!
